Butternut squash mon amour. I started appreciating pumpkin and butternut squash quite late into my twenties, but since my father grows these vegetables in his garden I now cannot wait for the arrival of the cold season in order to taste sweet and savoury dishes cooked with this versatile ingredient. Its natural sweetness makes it an excellent ingredient for cakes and muffins so why not do a little experiment and combine it with one of my favourite ingredients ever? And here it is…the omnipresent liquorice! Needless to say the pairing is superb, these muffin are soft and sweet (but not too much). You can’t get any better than this!

Polenta. For centuries it has been the staple of our grandparents and great-grandparents diet, accompanied by meat, cheese, or more commonly by milk (even though I’m aware it is a quite childish on it’s my favourite combination). Corn is a tenacious plant with a very good yield, two features which make of this plant the most commonly cultivated and the staple of many peoples diet all around the world. It can also be toasted and reduced to a fine powder to produce farina bona, a special flour which is typical of the Valle Onsernone, a Valley in Ticino. Corn flour can be used in many different ways, as coating meat or bread sticks instead of using breadcrumbs, and can also be used in sweet preparations such as cakes (like amor polenta) and biscuits. And so we are approaching the end of the month, and as usual I am posting just a few days before the end of this month’s MTC challenge. Last month, Francesca from the Blog Burro e Zucchero won and for this last challenge before the end of the year she decided to set a higher bar. This time not only a basic recipe to take inspiration from, but the obligation to take inspiration from written work, may it be a book, a poem, a story or a song, justifying the use of ingredients in relation to it. It’s Maroggia’s Mill Friday again! This recipe wasn’t meant to be published, well…not really. In fact I made it up for Azione, a quick job that was commisioned to me in a short time and I was able to pull together in just one hour prior to leaving home and going to the shop where I work part time. Needless to say there are just few pics I shot for my own database. But then my friend Michela, whom is always up to date and informed of my experiments, tried the recipe out and asked me to please please please post it so she could then make her own blogpost. That’s how much she loved the muffins, and trusting her as I trust my own judgment well…I could not decline!

Few weeks ago, in one of my usual daily stroll into the blog universe I stumbled into Cranberry’s blog, drawn in by a very nice biscuit recipe. And as it happens more and more often I got lost into this “dark forest” of recipes (did I ever mention my love for Dante?). What a delight! I discovered raviole del plin and ended my journey onto MTC challenge’s. Nothing like a nice good old challenge to push me into a new recipe!
