What could possibly happen when a friend offers you mealworms to taste? This is what happened two me a couple of weeks ago. I went over to the Mill for my usual flour collecting trip and found Alessandro holding a box of dried mealworms and a big grin on his face. Taste, he said. And taste I did indeed. Of course he commissioned me a recipe for Maroggia’s Mill Cookbook. How cool is it to work with him???? That’s how my Tenebrownies were born. But if dried worms make you feel queasy you can bake these delicious brownies with any kind of nut or ingredient that please your palate. They are simply divine. Crunchy on the outside and extremely chewy inside. You definitely have to try them! And what about the mealworms, what do they taste like? Well, I must say I was amazed…they have a distinctive aftertaste of hazelnut!!!! In this case the flavour is very attenuated by the high content of chocolate and cocoa in the brownies but the larvae give a very special crunchiness that I have never felt in any other food, which I really liked. The proof is in the pudding!

It has been hanging around for a long time, this thought. Unfortunately having many things to do and little time to stop and think and do something about it…but I couldn’t stop thinking this blog was born thanks to my passion for sourdough but lately my recipes have been increasingly lacking this ingredient. What happened? Nothing serious, some of it is to blame on the discovery of long fermentation which can make yeasted bread more digestible and fresh for longer time, just like sourdough bread. A little blame is on “Cuochi d’artificio” for which I decided to restrain myself to the use of yeast, being sourdough leavening too complex. And last but not least lately time to plan refreshments and dough rising has failed me big time.

At the first occasion I knew I had to do something about it. I threw a quick loving glance to the jar of my dear Hannibal Dolores Frank, my liquid sourdough culture, and rolled up my sleeves. In a jiffy I found the right ingredients and I started to put down, off the cuff, the recipe for these mock panettoncini fo Maroggia’s Mill Cookbook. Mock because mind you, panettone is a serious matter. The recipe is regulated by a disciplinary from which you can not escape, and the commitment needed to come up with a good homemade panettone is remarkable. This recipe in a way is no exception and I don’t recommend it to the faint of heart, or better faint of hand. Unless you are familiar with very hydrated or high in fat doughs, if you’re not quite skilled with handling and shaping breads I warn you nervous breakdown is around the corner waiting for you. But if you are experienced or daring enough go all the way and this recipe will not disappoint you. These little panettoni are perfect for a special, and why not romantic, breakfast. Soft as a pillow and sweet, I tell you. Bake them on a Saturday afternoon for Sunday morning. Pop them for a while in the oven before you tasting them while cocooning in the warmth comfort of your bed, wide smile under your cappuccino foam moustache. That’s amore!

Antinea is a special person. We’ve known each other for little over a year but it is as if it were a life time that we have been friends. It was a mutual friend who introduced her to me. With the impending 35th birthday I thought it would be good for me to start some kind of physical activity to keep fit. Amongst the various options the most popular for women in their thirties seemed to be pilates and talking to Marko it came out that her friend Antinea is pilates instructor. There was a nice vibe from the start and despite my stiffness and the struggle to assimilate her teachings I decided to trust her, committing to exercising and trying to overcome my limits. And so it was. I’m sure that without her there would have been no “Cuochi d’artificio” and I am convinced that pilates has greatly contributed to my physical and psychological well-being, giving me not only a new body but also a new mindset. Perhaps at my age I have finally reached a state of equilibrium and for that I must thank Antinea too.

What is love? This month Mtchallenge challenges us with baci, Perugina’s world famous chocolate confection and with the daunting task of opening our hearts. Difficult task, tempering chocolate as exploring the darkest recesses of our hearts. Looking back I can see how my view on love has changed, through relationships and heartbreaks. Different shades of the same colour, or so it seems. Have I yet understood what love really is or will my perspective change once again? One thing is clear, however, falling in love is to love as bran to wheat and only in trust, freedom, respect and above all sharing one can find true love. I consider myself lucky having had such a love in my love, even though it’s over now.

My bread featured on Essen Magazine: “Fashion Food” Editorial + Recipes / Il mio pane su Essen Magazine: Editoriale per la rubrica “Fashion Food” + Ricette

Life is strange, it’s not much in my style to make certain statements but sometimes it seems to me that wishes can come true without too much effort and this is exactly what happened with this adventure with Essen – A Taste Magazine I’m about to tell you. I well remember that Sunday morning in August. My friend Chiara and I were in my kitchen, hands wrapped around our cups of black tea, fragrant freshly baked ciabatta and assorted jams for breakfast. We talked about possible collaborations, ideas of projects involving food and fashion (she works as a stylist in Milan). Chiara suddenly came up with an idea, why not propose an Autumn/Winter fashion editorial for Essen Magazine’s column Fashion Food, featuring my bread creations too? We started writing down ideas, but then as you well know the notes ended up in the middle of a thousand other paperwork scribbled with ideas, projects and recipes to try out. Holidays are indeed over, and Maroggia’s Mill Cookbook is back as well, and back with a sweet tooth. This cake was born from the need to recycle egg whites that I had to freeze last Easter, after some proper Colombe baking (here is the link to the original recipe I used, my post has yet to be put online!). Having had enough of meringues and macarons I needed to find a new recipe to use up all those whites! Upon returning from vacation I realized that my freezer exploded with different vegetables, sauces, meat, and egg whites. It’s Maroggia’s Mill Friday again, and I am back with a sweet bread recipe. For too long these Piedmontese hazelnut have sat in my pantry. Yet another gift from my friend Michela, there are no words to describe these creamy and fragrant fruits from the generous woods of Piemonte. I knew they were very special from the moment I opened the crinkled plastic bag, crackling like a crystalline laughter of joy, and their scent enveloped me evoking other ingredients, other pairings. Here we go, another Friday and yet again another recipe for Maroggia’s Mill Cookbook. Today with Maroggia’s Mill flours we will prepare together some decadent and indulgent cookies, freckled with dark chocolate and topped with a delicious homemade cherry jam. I am a lucky girl, my father not only has a beautiful garden which delights us all with tasty fruit and vegetables (unfortunately this year I could not pick cherries…the fruits wilted on the tree the days I was in London) but I also have generous friends who, knowing of my love for this summer fruit, had a nice thought for me.
