Rice flour, Matcha and Lemon Cookies / Biscotti di farina di riso, matcha e limone

Tea time with a friend. Rice flour which has been sitting in the pantry for too long, as well as a jar of matcha powder which might as well be a find from an archaeological site. Consider lemons are never missing in my fridge. Put all of that above together and what you are left with is a batch of sensational cookies. And here’s the recipe!

Here we go, another Friday and yet again another recipe for Maroggia’s Mill Cookbook. Today with Maroggia’s Mill flours we will prepare together some decadent and indulgent cookies, freckled with dark chocolate and topped with a delicious homemade cherry jam. I am a lucky girl, my father not only has a beautiful garden which delights us all with tasty fruit and vegetables (unfortunately this year I could not pick cherries…the fruits wilted on the tree the days I was in London) but I also have generous friends who, knowing of my love for this summer fruit, had a nice thought for me.

Last Christmas I was full of good intentions. Many challenges were thrown around the web, themed especially for the festive season and in all good faith were pinned down on my calendar, looking forward to participate. Not only I forgot to bake a bread for Twelve loaves but didn’t participate to a single contest. Blame it on the panettone obsession, on the new part time job, and well…on the festive season! The only recipe that was completed, foreseeing many happy festive baking moments was candied ginger.
