MTChallenge: Terrine!

Another month, another challenge. Welcome back to the monthly appointment with the MTChallenge. The last challenge was won by Giuliana, our vintage hen which is quite passionate with terrines.I must confess. Terrines scare me, they always did. I don’t like them. Blame it on the gelatin, which remind me of culinary horrors of the 70s which can be found on many pages of my mum’s culinary scrap books. I always considered terrines a too playful and poor of substance dish (forgive me Giuliana!). But MTC is MTC, one simply can’t escape from it. As a matter of fact, the more a subject is far from what I like the most, the more stress it generates and the more excited I feel. More or less. The roughest British sides of me started saying “No cold jellies… can’t you see you finally have the chance to try and bake your own pork pie? You don’t want to lose this opportunity do you?”. HI must come out of the pie closet and my beloved Van Pelt will be shocked, she will… I’ve never ever baked a pork pie in my whole life. I needed MTC to finally bake one! I have to be honest. I had many ideas mainly involving apples, oranges, beetroot and liquorice. Then I had a fennel, lying on its own in my fridge, and decided to flavour the broth with spices and the pig with herbs. No overthinking and simply following my gut.

Another day at the Mill, a new recipe for the Cookbook…or rather two new recipes! Today I will be teaching you how to make seitan, a product that has gained more and more visibility in the past years. It takes very little time to make it and the result is excellent. Seitan is a high-protein food of oriental origins that is often used in vegetarian and vegan diets. Being very rich in gluten it is not suitable for celiacs. If cooked with seaweed or flavoured with soy sauce seitan is a complete food, containing 8 amino acids essential to our diet. A very versatile product and a good alternative to meat (it can be flavoured in many different ways), it is worth to include this ingredient in our diets. One kilo flour is enough to obtain 500 g of seitan in just a few minutes of kneading and washing the dough. The rest of the job is done by soaking and boiling the mixture of flour and water.

Today I present you with a Tuscan recipe which I revisited, Fagioli all’uccelletto. A meat dish just for a change, a once in a while diversion from the usual bread baking routine. A nourishing and warming dish. Fagioli all’uccelletto is a traditional Tuscan dish, typical of the Florentine area. According to Pellegrino Artusi the name derives from the herbs and aroma used to cook this dish (especially sage) which where once used to flavour dishes made which had wild birds (uccelletti) as the main ingredient. This dish employs ingredients which are more readily available and serves as a mock version of those recipes. A rustic and rich meal, with plenty of animal and vegetable proteins, which is perfect to warm up the body and lift the spirit during those cold and gloomy winter evenings. I don’t know about you, but the perfume of meaty dishes, the sound of tomato and legumes splattering, mumbling and rumbling in a saucepan always get me in a good mood. It just smells like home…

Chicken livers…so much I have eaten, so much I love them! I discovered this delicacy during my studies at the university of Florence, and I still enjoy them after so many years. There’s nothing more winter and cuddly. The ingredients are simple and poor. Bread is always in the pantry. Appetizer anyone?

Recently I realized that concentrating efforts on my macrobiotic diet, recipes for Maroggia’s Mill Cookbook  and MTChallenge participations a this blog features almost exclusively bread recipes. Of course it makes total sense, considering the name of the blog itself is quite exhaustive about my main passion in the kitchen, but still I do believe it would be a good thing just to post some recipes not related to bread every now and then. So I thought about going back to one of my old loves, curry. I will never grow tired of saying curry it is not a powder that one can buy in the supermarket, but a blend of spices that you can easily do at home by varying amounts and types of ingredients. Seen the limitations the macrobiotic diet imposes I came up with a recipe which does not employ coconut milk, but uses oat milk instead. The result is great. If you make oat milk yourself (here you can find the recipe you will see how the sauce thickens with no addition of ingredients such as corn starch. Great, right? This creamy curry is very tasty and not spicy at all and gets even better if allowed to stand twenty four hours. Are you ready to bring some Indian flavour in your kitchen? Here I am a little sleepy and with half closed eyes as I sit here, typing at my computer. What an adventure for this month’s MTChallenge! Diabolical Arianna saparunda.blogspot.ch, who won the contest last month, launched a pretty complex challenge inviting us to cook our own version of the world famous American Hamburger. I can’t deny it, as all the staff of the challenge is very understanding when allergies and special diets ar involved I first contemplated the option of participating with a macrobiotic hamburger. That thought lasted about thirty seconds, then I realized that it had no sense at all, at least from my personl point of view on this dish. Let’s face it hamburgers must be rich, fat and rewarding. It didn’t feel quite right to stick a vegetable burger into a wholemeal bun with a tahini and umeboshi sauce. Hey, hold on a second…now that I came up with this I must admit it does sound quite appealing. Maybe I’ll give it a try soon. But anyway back to my burger. Blame it on the diet restrictions or just my own view on burgers (burger = meat), but I decided to focus on a juicy and tasty version of the American fast food par excellence. And I don’t regret it. Pizza, oh my beloved pizza… Anyone who knows me well knows as well how much I love this dough and how hard I worked over the years to get perfect results. The funny thing is that I’m the queen of “neapolitan style” pizza while I can’t get proper results with the dish version.
